Overnight Oats
It really annoys me when people tell me that they don’t have time to prepare or sometimes even eat breakfast. This literally takes 1 minute to prepare. I know that most people like to crash on the sofa when they get home from work, but you could easily make this in the advert break of your favourite tv show!
I’ve got to admit that this recipe took a while to grow on me. I love to make a proper old school porridge and I didn’t really want to start messing around with it. I’d heard about overnight oats but I just assumed that it’d be chewy like some muesli’s can be.
When you have to get up, walk the dog and leave the house by 6.15am so you can get to the gym before the rush you must have breakfast already prepared as who wants to be getting up at 5am when they don’t have to?
I like to keep a plastic container in the fridge stocked with about a dozen hard-boiled eggs. These work as a great breakfast when you have no time to prepare anything, but after breakfasting on boiled eggs for months I decided that it was about time to start mixing things up a little.
I love toast, but I also love jam, marmalade and practically anything sweet smeared over it and thought that this wasn’t the best pre-gym breakfast! As I said earlier, I love porridge. But again, I don’t want to be cooking that early in the morning and I love to leave it simmering away for an age so that the oats are lovely and soft. So this is why I decided to give overnight oats a try.
They literally take a minute to prepare and you can pretty much use anything that you have in your store cupboard to add a bit of flavour. After rummaging around in my cupboard for any nuts and dried fruit that I had in stock, this is the recipe that I have settled on and I think that the blend of nuts and fruits works really well.
Serves 1
Ingredients
- 35g oats
- 1 tbsp. chia seeds
- 1 tbsp. dried cranberries
- 1 tbsp. raisins
- 1 tbsp. cashews
- 1 tbsp. runny honey
- 120ml milk
- Add all of the ingredients to a bowl. Mix thoroughly, cover with cling film and leave to soften in the fridge overnight. 6-8 hours works best.
